You are burning alcohol. Lemon extract is mostly alcohol. But, it burns away letting everyone eat and enjoy. Let me know how your try came out. I’m sure your and your guests will love this.
Our Holiday Tradition: Fire Ice Cream
My granddaughters love “Fire Ice Cream.” They ask for it all throughout the year. But, it’s at Christmas and New Year’s Eve that it is even more special.
I began making Fire Ice Cream for my girls years ago. I have no idea where I got the “recipe” but it’s super simple and a crowd-pleaser for children and adults alike. Friends ask, “You do what?” … “How is that possible?” But, this display is spectacular and so, so simple.
Fire Ice Cream
Ingredients:
Place one sugar cube per person in a shallow dish. Pour lemon extract over the cubes.
While the cubes soak up the extract, place a scoop of ice cream in each serving dish.
Place one soaked sugar cube on top of each serving of ice cream.
Turn off the lights. I make my guests wait in almost total darkness.
Place all ice cream dishes on a tray for dramatics. Light each cube quickly.
Walk to the table in the dark room with the Fire Ice Cream tray. Listen to all the “Oohs” and “Ahhs.” You will impress everyone there.
We serve Fire Ice Cream with our Christmas cookies.
The fire will burn out slowly in about 1 minute. But, until that time everyone will be totally impressed.

Ice cream (We use vanilla or peppermint. You can buy peppermint-flavored ice cream now, but for years I used crushed candy canes and mix the candy crumbs in slightly melted vanilla ice cream. I would re-freeze the ice cream until ready to use).
